Ruby-Thyme Citrus Spritz

Serves 4-6

A drink made and served in a tall jug is the very picture of hospitality, perfect for entertaining guests. Ruby grapefruit juice is slightly sweeter and less astringent than regular grapefruit and is well worth seeking out. That said, this spritz can be made with any combination of citrus you like – mandarin juice would also be lovely. We prefer using large ice cubes as they melt slowly and chill the drink effectively without diluting the flavour too much.

Ingredients

  • ½ cup honey
  • 3 thyme sprigs, plus extra to serve
  • 180ml Non-Alcoholic Spirit (we love Seedlip‘s Garden 108)
  • 1 cup ruby grapefruit juice
  • Chilled tonic water, to taste
  • Ruby grapefruit slices and orange slices, to serve

Method

  1. Combine honey, thyme and 60ml boiling water in a heatproof jug, stir to combine and set aside to cool and infuse.
  2. Fill a tall jug with large ice cubes, then add your non-alcoholic spirit of choice (we love Seedlip’s Garden 108). Add ruby grapefruit juice and honey-thyme syrup to taste. Top up with chilled tonic water, add ruby grapefruit slices, orange slices and extra thyme sprigs and stir well, then serve.

Sparkling Berry-Berry Iced Tea

Serves 4-6

Zero alcohol in a drink doesn’t have to mean zero flavour. Here, we’ve layered berry notes with our fragrant Mixed Berry Organic Tisane and fresh berries (we’ve used strawberries but raspberries would work well, or even a combination of the two). If you prefer your drinks on the sweeter side, you could add a spoonful of strawberry jam or honey to the tea while it’s brewing, or top up with chilled lemonade instead of soda water.

Ingredients

  • 4 David Jones Mixed Berry Organic Tisane 20 Pyramid Tea Bags
  • 6 strawberries, hulled and halved
  • Juice of 1 lime, plus extra lime slices, to serve
  • 120ml Brunswick Aces Spades Sapiir
  • Chilled soda water, to taste
  • Lemon slices and mint sprigs, to serve

Method

  1. Pour 1 litre boiling water over the tea bags and stand to brew to your preferred strength. Remove tea bags and chill the tea.
  2. Divide strawberries evenly among two large serving glasses, muddle gently then squeeze in lime juice and muddle slightly once again. Top with Brunswick Aces Spades Sapiir, add a large ice cube or two and top up with soda water to taste. Add lime slices, lemon slices and a sprig of mint and serve.
