PROFILE
Chris Thomson, our Master Distiller has meticulously selected 3 whiskies. The Symphony No1 is the first blended malt from the House of Lark next, our Limited Release Brandy & PX Sherry Cask; a sticky, plummy, homemade fruit cake in a glass, and lastly our third Rum Cask release sees the triumphant return of a now classic Lark finish - a spectacular joining of Single Malt Whisky and our very own unique Tasmanian rum. Our Lark Distilling Co. Gift Pack includes a complimentary Glencairn whisky glass, emblazoned with a laser-etched, Lark insignia. The Glencairn Glass is designed especially for whisky, ensuring the taste and complexity of each sip is savoured and enjoyed.

TASTING NOTES

Symphony No.1
Nose: Fresh mango, toasted pineapple, orange, vanilla and tangerines. Luscious and fruity.

Palate: Peaches, apricot, even more mango, and sweet Tasmanian apples dipped in toffee.

Finish: Fresh fruit and citrus. This whisky has length, poise and balance.

Brandy & PX Sherry
Nose: Rich winter fruit cake crammed with citrus peel, forest fruits, dark cherry and vibrant top notes of Tasmanian Brandy all wrapped in a toasted oak blanket.

Palate: Dark and brooding, this whisky delivers you into a vortex of rich plum pudding, intense oak, blackberries, dried fruit and a hint of smoke.

Finish: Long, deep and fully encompassing

Rum Cask III
Nose: Full and sweet. Golden syrup, stewed apple, cloves, and almond nougat.

Palate: Wonderfully lifted, warm, and slightly resinous. Dark toffee, candied citrus, and nutty dry oak.

Finish: Gunpowder, tobacco, and treacle. The Rum really comes into its own on the finish and invokes romantic musings of the Wild West.
