The most celebrated estate of Chablis, the wines of Domaine Raveneau are a rare find¿exceptional because the vineyard holdings are almost entirely made of Grand Cru and Premier Cru fruit, painfully finite as so few are produced, outstanding because of their tremendous quality and consistency, and unusual given the modesty of the vignerons who create these world-class wines.

The vines are harvested by hand, the juice is left to settle, and then racked off its lees into cuvee to ferment. Alcoholic fermentation takes two weeks, followed by a malolactic fermentation in barrel.

Wines are aged for 18 months in older 225 litre and 132 litre oak barrels. DOMAINE WINE SHIPPERS Importer

This is perhaps the most elegant and floral-infused wine in the range with its array of various white flower scents, especially acacia which is nuanced by wisps of the ocean breeze, iodine and algae. The restrained and well-detailed flavours possess a sophisticated and refined mouthfeel while the stony and chiselled finish exhibits excellent persistence on the bone-dry finish. This is class in a glass and a stunning rendition of the appellation though note well that at least moderate patience is strongly advised. ALLEN MEADOWS, BURGHOUND
