For reasons no longer relevant (however interesting), Michael Hall was once a jewellery valuer for Sothebys in Switzerland. He came to Australia in 2001 to pursue winemaking, a lifelong interest, and undertook the wine science degree at CSU, graduating as dux in 05. His vintage work in Australia and France is a veritable whos who-in Australia with Cullen, Giaconda, Henschke, Shaw & Smith, Coldstream Hills and Veritas-in France with Domaine Leflaive, Meo-Camuzet, Vieux Telegraphe and Trevallon. He is now involved full-time with his eponymous brand, along with some teaching at the Nuriootpa TAFE. The wines are as impressive as his CV suggests they should be. JAMES HALLIDAY
Sang de Pigeon (pigeons blood) is a nod to my former life as a jewellery valuer. Its the trade term for the colour of the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The fruit for this pale-coloured Chardonnay was grown far to the south-east, in South Australias Adelaide Hills. Picked on the 24th of March, pressed to French oak puncheons (15% new, Damy), wild fermentation, 30% malolactic, Matured for 11 months on yeast lees, filtered and bottled.
